Alluring aromas of fruits of the forrest, sweet toasty oak and dried herb.
Palate: 
A wine of structure and finesse. The front palate melds together the berry fruits and oaky spice flavours while the fine acidity and lingering notes of dried herb add length and elegant structure.

Drinking wonderfully now but will develop nicely for 5-8 years.

Vintage Conditions: 
2011 was a mixed season in Central Otago. It started with an unusually warm November and December which made it feel like we were heading for an early harvest. However, a much cooler December followed which was great as it slowed the ripening. Unfortunatley the cooler unsettled weather also brought some intermittent rain which gave us higher disease pressure than usual. By harvest Mother Nature was back on our side with a clam and settled Autumn. A more challenging season but expertly managed by our vineyard team to produce wines of full flavour and structure.

100% French Oak Barriques - 30% new, 12 months total in oak

Sourced from our Golden Terraces Vineyard in the Bendigo sub region of Central Otago this Pinot Noir has aromas of brambly fruits, dark cherry, five spice and a hint of smoke. Rich dark fruits on the palate are balanced nicely with firm tannins and soft acidity.

Vintage Conditions: 
The cooler season produced plenty of challenges for our vineyard team in Central, but produced elegant wines with fine tannins.
Grape Variety: 
100% Pinot Noir
Maturation: 
The fruit was harvested over a 2 week period, brought into the winery and gently destemmed into the fermenter to start their cold soak. Ferment was 7-10 days, then the parcels were pressed, settled and then run to tanks and barrels. Mainly tank matured. About 22% was matured in French barrels and the remainder was in stainless steel tanks for a total of 10 months.

Leading on from the 2009, the 2010 once again has a lovely complexity of fruit and savoury characters. If allowed it can really open up in the glass and years.

Dark purple/garnet
Nose: 
A wonderfully rich and, in some ways, rustic palate of earth, chocolate, spice and dark cherry aromas.
Palate: 
The nose follows into the palate with dark cherry and earthy, chocolate notes, then the firm tannins pull the flavours together and leave the palate crisp and awaiting the next sip.
Serve: 
At about 15oC, or just below room temperature.

Mud House Central Otago Pinot Noir 2010

Harvest commenced 6th April in our Bendigo vineyard. The grapes were gently destemmed, allowing whole berries to remain intact. After a cold soak, each parcel was fermented separately, with a combination of wild and cultured yeast. Each batch was hand plunged to extract the vibrant colour, flavour and delicate tannin structure. Each parcel was then pressed separately to a mix of new and used French oak barrels or remained in tank. In the spring after completing malolactic fermentation, each parcel and tank was tasted and blended.

Vintage Conditions: 
Central Otago saw a very dry November which lead to late flowering with naturally lighter crops.&nbsp; Summer started slowly but we experienced a warm February which saw 8 days of 30+ temps in our Bendigo vineyard. After the a few frosts and a touch of rain, harvest commenced on the 6th April- about average for the Bendigo region. The cool start maintained lovely structure and acidity and the warm finish to the season gave us exceptional fruit concentration. A stellar season.

Dense, dark fruit with elements of dried nutmeg aromas combine with a rich and lingering palate of cherry and bitter-sweet chocolate. A wine to follow as it evolves and develops over the next 10 years.

Red/purple.
Nose: 
Blackberries, plums and dried spice. Rife with dark fruits, complemented with savoury spice from the French Oak.
Palate: 
At first the fruit covers the mouth and tongue with wild berry and dark cherry flavours, then things move to dark chocolate, kirsch and liquorice before being tightened up wonderfully by the tight, firm tannins which should reward careful cellaring.
Serve: 
Serve at room temperature in generous glassware and allow to breathe.

Mud House Swan Central Otago Pinot Noir 2009

The harvest in our Bendigo Vineyard commenced in perfect conditions on the 10th April. After handpicking the full clusters were gently de-stemmed into small open fermenters. After a 7 day cold soak the must was allowed to warm and fermentation commenced naturally. The fermenting must was then hand plunged 2-3 times per day to extract the colour, flavour and tannin from the skins. When the perfect balance of these three was reached the must was pressed and transferred into French oak barriques.

Nose: 
Lifted notes of dark red fruits and cinnamon spice combine with a background of mocha and crushed herb.
Palate: 
A bold but elegant wine. Bright notes of dark cherry, clove and mocha-oak fill the palate. Lovely rounded tannins and clean acidity offers length and structure.
Peak Drinking: 
2010 – 2016
Suggested Food Match: 
Roast venison and warm beetroot salad.

Vintage Conditions: 
After repetitive frosts at the start of the season we mitigated our way out of the danger zone with only a small portion of the vineyard being affected. The growing season progressed well with excellent uniform growth, great flowering and resulting fruit set. Very careful fruit thinning saw a targeted and balanced crop develop fantastic flavour and intensity. The ripening period was long and resulted in excellent flavour concentration. Some late cooler weather saw the frost protection get a work out late in the season. All the fruit was picked at the very peak of its physiological ripeness. Certainly a cliff hanger!
